General Information:
Water: Soft, balanced mineral profile. Favour Magnesium and balance with Calcium, with little bicarb. (≈60-100 ppm TDS)
Rest time: 7–14 days post-roast
Filter Recipe
Grind setting: Medium–fine (adjust for 2:30–3:00 total brew) - Around 25 Clix.
Brewer: Either Conical (V60, Timemore) or Flat (Orea, Solo)
Dose: 16 g coffee → 260 g water
Water temp: 92–94 °C
Pours: 3 (bloom + 2 equal pours)
Pour Structure: 60g Bloom for 40s, followed by 2 equal pours of 100g. Drawdown of 2nd pour around 1:25. Last pour when bed is dry. All pours from a medium height to promote agitation.
Total brew time: ~2:45

We offer Swiss Post Postpac Priority (with tracking), Fedex, and DHL. Rates depend drastically on size of package, and destination. Customs fees may be due, and must be paid for by the receiver. Usual transit times:

The farm of Hacienda La Florida is famous around the specialty coffee world as a pioneer of Ecuadorian coffee farms. Run by Fabricio and Ramiro Coronel, we know this farm really well, after visiting several times, including producing part of our WBrC 2021 winning blend.
The growing region of the farm sits around 1500m above sea level, surrounded and encompassed by dense jungle and reforestation projects. Fabricio grows Catucai, Sidra, and Typica Mejorado at his farm - which is located about 1km, and 500m in elevation from his house, and processing centre. They transport the cherry by donkey most of the time.
This lot is from Fabricio's Sidra trees, which are absolutely thriving in the natural jungle in Sozoranga. He picks really rich, ripe cherries, and washes and sorts in the tubs as seen in the picture below. He then depulps straight away, and lays out to dry immediately. This leaves some mucilage left on the seeds, but not so much that there's a lot of fermentation happening. The result is a very clean honey, where the mucilage doesn't oxidise too much, and the colour of the parchment remains clear - a more pale, white colour - hence the name "White Honey".
Fabricio has built a custom dark dry room to make the drying process as controlled as possible. This lot was slow dried in this room which makes such a clean profile, with elegant florals, bright yellow and white fruits, and a juicy acidity that will linger, and develop into the sweet honey-like sweetness from hot to cold.
It's a super tasty cup - one that earned Fabricio the 3rd place in the Taza Dorada 2022 competition with this exact lot - which we purchased from Auction in 2022, and have since frozen down in vacuum sealed bags to preserve it, and wait for the right time to thaw, and roast for you, and here it is!
