General Information:
Water: Soft, balanced mineral profile. Favour Magnesium and balance with Calcium, with little bicarb. (≈60-100 ppm TDS)
Rest time: 7–14 days post-roast
Filter Recipe
Grind setting: Medium–fine (adjust for 2:30–3:00 total brew) - Around 25 Clix.
Brewer: Either Conical (V60, Timemore) or Flat (Orea, Solo)
Dose: 16 g coffee → 260 g water
Water temp: 92–94 °C
Pours: 3 (bloom + 2 equal pours)
Pour Structure: 60g Bloom for 40s, followed by 2 equal pours of 100g. Drawdown of 2nd pour around 1:25. Last pour when bed is dry. All pours from a medium height to promote agitation.
Total brew time: ~2:45

We offer Swiss Post Postpac Priority (with tracking), Fedex, and DHL. Rates depend drastically on size of package, and destination. Customs fees may be due, and must be paid for by the receiver. Usual transit times:

From the famous farm of Panama, Hacienda La Esmeralda, comes a complex and deep Natural Processed Geisha from their farm called El Velo in Alto Quiel, Boquete. This lot is from their Porton plot at 1700m, well known for producing incredible Geishas. The daytime and nighttime temperatures, along with humidity from the microclimate of boquete means that we have a perfect growing climate and terroir for Geisha.
This Porton is lot 2 ANC - this means there was "A" for Anaerobic Fermentation - "N" for Natural (in cherry), and "C" for the controlled, dark room drying. The Anaerobic Natural fermentation gives this lot more complexity and depth, and as it's dried in the cooler, dark room, it stays much cleaner than other Anaerobic Naturals, and isn't so wild and untamed.
You can expect this lot to have more fruity character, think complex Grape, Red Currant, Grapefruit, Mango, Orange - but the intensity is on the softer side. There's great florals along with it, and a juicy - smooth and sweet profile to round it out. This coffee will age really well, and it is a little lighter than some of our other roasts in the cup, so will tolerate higher extractions.
