General Information:
Water: Soft, balanced mineral profile. Favour Magnesium and balance with Calcium, with little bicarb. (≈60-100 ppm TDS)
Rest time: 7–14 days post-roast
Filter Recipe
Grind setting: Medium–fine (adjust for 2:30–3:00 total brew) - Around 25 Clix.
Brewer: Either Conical (V60, Timemore) or Flat (Orea, Solo)
Dose: 16 g coffee → 260 g water
Water temp: 92–94 °C
Pours: 3 (bloom + 2 equal pours)
Pour Structure: 60g Bloom for 40s, followed by 2 equal pours of 100g. Drawdown of 2nd pour around 1:25. Last pour when bed is dry. All pours from a medium height to promote agitation.
Total brew time: ~2:45

We offer Swiss Post Postpac Priority (with tracking), Fedex, and DHL. Rates depend drastically on size of package, and destination. Customs fees may be due, and must be paid for by the receiver. Usual transit times:

This release is a very tasty lot coming from a slightly less well known farm - but don't let that stop you - you can expect everything we love from a very high quality Anaerobic Washed Geisha from Alto Jaramillo, near Boquete in Panama.
The owners of Agricola Geisha is the Palenzuela Family, with our friend Manuel Barsallo who is in charge of Processing and Quality among the farms, and we've seen a marked improvement in quality this year since his involvement. This particular lot was grown at their farm in Alto Jaramillo, just east of Boquete, up at 1500masl. There is a lot of gentle mist/rain called "Bajaraque" which is a unique seasonal phenomenon where the 2 seas either coast of Panama produce a soft rain/strong mist which is responsible for a lot of the incredible growing potential that Boquete coffees are famous for.
This lot was depulped, and fermented in anaerobic conditions before being washed, and then dried in a special dark room with constant dehumidifying and air circulation. This upgraded processing and drying are techniques that Manuel implores to get the most out of their coffees - giving us a cleaner finish, and more vibrancy in the cup.
Overall you can expect a classic Washed Geisha profile - plus extra vibrancy from the fermentation. For us we get strong notes of Jasmine, Apricot Acidity, Juicy Peach and Grapefruit, and more complex florals like Coffee Blossom and Orange Blossom, and a clean tea like aftertaste. This is just a very small lot, so get it while you can!
