General Information:
Water: Soft, balanced mineral profile. Favour Magnesium and balance with Calcium, with little bicarb. (≈60-100 ppm TDS)
Rest time: 7–14 days post-roast
Filter Recipe
Grind setting: Medium–fine (adjust for 2:30–3:00 total brew) - Around 25 Clix.
Brewer: Either Conical (V60, Timemore) or Flat (Orea, Solo)
Dose: 16 g coffee → 260 g water
Water temp: 92–94 °C
Pours: 3 (bloom + 2 equal pours)
Pour Structure: 60g Bloom for 40s, followed by 2 equal pours of 100g. Drawdown of 2nd pour around 1:25. Last pour when bed is dry. All pours from a medium height to promote agitation.

We offer Swiss Post Postpac Priority (with tracking), Fedex, and DHL. Rates depend drastically on size of package, and destination. Customs fees may be due, and must be paid for by the receiver. Usual transit times:

From the high slopes of Cañas Verdes comes this standout lot from Abu Coffee - a producer we return to whenever we want a coffee that embodies the Panamanian terroir - lot #3170. This Anaerobic Natural Geisha combines great growing conditions with expressive fermentations that give us bright tropical notes in the cup!
Cañas Verdes sits in the Chiriquí highlands, where mist, volcanic soils, and cool nights push the plants toward slow, expressive development. Abu’s microlots are shaped by this mix of altitude and careful agronomy - sweet cherries, bright acidity, and the signature florality that has become their calling card. The cherries for this lot were picked at peak ripeness and processed with Jose’s meticulous approach for naturals - a multi phase fermentation, where the cherries are fermented, and then partially dried, followed by a further fermentation. This can lead to deeper notes in the cup, like red grape, and raspberry. The cherries are eventually fully dried there at the farm until 10% moisture.
This lot has all the great qualities we've come to expect from the terroir at Abu Coffee in Canas Verdes - and the intensity and complexity from the processing that Jose has done. You can expect complex tropical fruits, bright citrus, and sweet florals rounded out with a smooth mouthfeel.
