Processing Level: 5/5 - Half of this blend has had some heavy processing with added fruit to modify the taste profile. 


We first tried Edwin's coffee through many different roasteries all over the world, from his Natural Bourbon's to his Golden Washed Sidra's, they were all fantastic clean, vibrant coffees. During a recent trip to Colombia we had a few hours free to visit Edwin and Cabra at Campo Hermoso and got to spend some time getting to know him, and his team just up the hill from Armenia. His philosophies with farming, processing, and general outlook an life really resonated with us and we started by purchasing 2 lots from him. This lot was a special first for Rose Coffee - a Fruit Co-Fermented coffee where Mora (Colombian Raspberry) was added directly to the fermentation in Cherry in high concentrations. The result is a very high quality co-fermented coffee, which is surprisingly tasty and the best we've ever had!

When thinking about the best way to use this coffee, we realised that possibly the perfect use would be as a blend with a similar coffee, but without the fruit infusion - a classic Washed Pink Bourbon. This coffee provides a counter balance to the intensity of the Mora coffee, and cleans up the profile a little bit in the brew. 

We recommend this coffee enjoyed cold/over ice. Imagine as a flash brew filter over ice, or as a cold brew, or an iced latte espresso. The refreshing, bright strawberry and raspberry notes are intense, yet high quality - it's quite a fun coffee, and in our opinion, worth a try!
