Processing Level:
1/5 - This is a low processing coffee where simple washed processing is used on traditional varieties.

This coffee is our single origin house coffee for a more modern take on espresso, compared to our House Blend. This coffee in particular comes from Jairo Arcilla, a large producer in Armenia, Colombia.

This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped.

The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved.

The result is a classic profile of Washed Colombian coffee from this region - Quindio. You can expect notes of Citrus, Caramel, Milk Chocolate, and some baking spices - perfect for a daily drinking espresso, which is why we selected it as our main coffee at the Collective Bakery.
