Another very special release we have is from Los Nogales in Huila, Colombia. This farm really impressed us with a bunch of amazing profiles of their traditional varieties, and extra special processing that we got to take a part of while we visited the farm last year. This is our first release from Oscar and Angie and we'll be releasing several lots through this year!
This particular lot starts with their Typica variety that they grow at their beautiful farm. It begins with a selection of cherries that are floated and thermal shocked to get ready for fermentation, before being depulped. It was then fermented with a special yeast which had characteristic to boost sweetness, and the tropical fruit notes.
The coffee was then washed and dried in special mechanical driers for a clean finish and a long shelf life to this humble typica.
This coffee definitely has processed characteristics, but is an interesting, and complex profile. You can expect the fruit qualities to be balanced by a pleasant milk chocolate sort of note in the cup, great for daily brews!
