This is a very special release, one of the worlds first to roast this coffee grown in Australia! Crater Mountain Coffee is located just west of Cairns, at the Atherton Tablelands in Far North Queensland, Australia.
Australia is a unique origin for coffee, and while there is a decent production for domestic consumption, there is very little that is exported, and of higher quality. Someone who is pioneering the specialty coffee section of Australian grown coffee is Lucy. She has travelled all over the world, and studied a lot, along with many years of trial and error to perfect ther production and processing of her farm in Australia.
The terroir in this farm is quite interesting, and the soil has a great mix of minerality from old volcanic soil, along with rich red clay, making growing coffee at Crater Mountain very special. The climate around this farm provides plenty of rain, mist, sunshine, and cool evenings, with warm daytime temperatures - making a micro-climate ripe for producing great coffee.
She began working with Christian Hansen to use their yeasts and bacteria to enhance flavours through fermentation by using LB1, and Pichia yeasts during this natural anaerobic fermentation in Cherry for 7 days. They are then dried for around 25 days in a temperature and humidity controlled drying room and left to stabilise for several months.
This processing is all carried out with intensive care and scrutiny by Lucy and her team, and they are constantly striving to improve their processes, both for their specialty fermented naturals, and the commercial volume washed and pulped coffees.
This coffee has an interesting flavour profile - the coffee is quite dense, so the roasting is quite light, and there are some milk chocolate, and nutty notes in there, along with lots of citrus, stone fruit, and even some delicate florals making a really interesting profile for this Australian grown coffee!
