This is a special find for us when we were visiting Huila in Nov 2023, and we're thrilled to get some coffee from the hard work of Edier and Cesar, from their beautiful farm Finca Buena Vista. This lot stood out for us considerably on the cupping table for it's bright and clear red fruit character which was super intense, yet still clean from the washed finish.
This lot is made up of their Huila region Pink Bourbon, which had special treatment in the processing in particular. The Mosto from a previous batch of Pink Bourbon was used to ferment this coffee in mucilage. This acted like a starter, providing yeast and bacteria, and which lowers the pH, which help bring out that fruity character to this lot.
After the coffee was depulped it was fermented for several days, until a pH of 3.4, where it was then washed and dried on typical shade driers, common in the area. Once it was dried it was stabilised to reduce water activity.
This coffee is a special one to us, as it was used to place 4th in the Swiss Barista Championship in October by Collective Bakery Barista - Jania!

Everything is shipped from Zurich, Switzerland. We use Swiss Post, UPS, Fedex, or DHL as our shipping options.
