Processing Level:  1/5 - The taste of the terroir and varietal shine in this coffee - the impact of the process is very low. 

 

This coffee is another great example of classic processing of great Washed Ethiopian Coffee. It's got the floral, and light fruit elements that we love from Washed Ethiopian Coffees grown at high altitude, and processed really well.

 

This coffee has been processed at a washing station owned by Wete Ambela Coffee Export PLC. It is located in the Banko Gotiti Kebele, Gedeb Woreda, Yirgacheffe Zone.

The cherries are sourced from farms situated at altitudes of 1950 to 2100 metres above sea level, with each farm spanning 1 to 2 hectares. These farms collectively produce around 54 tons of coffee.

Ripe cherries are handpicked and pulped to remove the mucilage. They are then soaked for 48 hours underwater, moved around channels to wash off the last mucilage. The coffee is then dried on African beds for 18 to 21 days until ideal moisture content around 11%.

This lot was purchased with the help of Nordich Approach, and their parteners in country. All pictures are provided from them.
