2/5 - This is a minimal processing coffee where simple washed processing, with a small fermentation to remove mucilage is used to elevate the varietal and terroir we love.


Here at Rose we absolutely love Pink Bourbon - especially the classic washed expressions. With a delicious, bright Citrus and Floral profile, with tons of sweetness and clarity - it's a profile we could drink all day, every day. 


When we first visited Linarco at his lab in Palestina, we fell in love with his classic profiles of his Geisha, Pink Bourbon, and Tabi. It's no wonder he has won Cup of Excellence in Colombia, and placed highly several times with his Pink Bourbon, and Geisha!
This release is his Pink Bourbon, and is a bright, classic clean expression of Huila Pink Bourbon from a single farm. You can expect bright citrus, clean florals, and great acidity with a lot of sweetness and a juicy mouthfeel however you brew this coffee. 




This Pink Bourbon was picked with selective picking for ripe cherries only. It was then rested in Cherry for 48 hours before being depulped and fermented with water to remove mucilage for 64 hours. Then it was dried in classic shade drying Marquesinas for around 10 days. This is a classic way of producing washed coffee in Huila, with the small fermentations helping boost intensity and vibrancy.
