The Thageini wet mill is one of four mills operated by the Aguthi Farmer’s Cooperative Society. It is the second largest mill in terms of member producers, with around 350 men and 100 women members, and the Aguthi Farmer’s Co-operative Society has around 2000 members total. The Society provides training for their members on techniques for farm management, picking, sorting and agronomic techniques. They hold workshops for members to meet and learn from each other and provide specific advice to producers on their farm where possible.
The processing for this lot involved picking of ripe cherries, and sorting, before fermenting in a sealed tank flushed with CO2 to push oxygen out. The fermentation is "controlled" with yeast, temperature and humidity, and once finished, removed from the tank and placed in a thick layer on raised beds to dry for a few days in the sun. Then they are spread into thin layers to dry more easily, for 20 days, being turned regularly, until a moisture reading of around 11% is reached.
This is a very unique lot and a unique expression of what Kenyan coffee can be. Project Origin has been working with this wet mill for several years, and have improved quality to the final cup by implementing the CM process there. You can expect a really fruity, and rich profile, very winey and fruity, while maintaining a lot of that red fruit character you'd expect from a great Kenyan SL28/SL34 profile.
This coffee has been sourced with our partners in Australia, Project Origin, who we trust are doing good work in the region, and improving people's lives on the ground, at the farms and stations.
