Processing Level: 1/5 - The processing of this lot is very clean, and the cup profile has very clear Terroir and Varietal notes.

 

This is a very fine example of excellent Kenyan coffee, we find it very light and crisp and juicy, with a bright cup profile, touches of florals, and herbals - and clean! 

 

 

This coffee comes from the Ruthaka Farmers Cooperative Society (FCS), located in Nyeri in Central Kenya. Nyeri is located on the slopes of Mount Kenya, and together with the neighbouring region Kirinyaga, is known for its intense, complex, and flavour-dense coffees. The FCS is made up of mainly smallholder farms, each with some 100 trees. They are organised in Cooperative Societies that act as umbrella organisations for the factories where the small­holders deliver their coffee cherries for processing.

The annual average rainfall in the area is 1400 mm. The temperatures are mainly between 14 and 25 celsius. The soils around Mount Kenya are rich, mainly Nitisol, which is developed from volcanic rocks and has better chemical and physical properties than other tropical soils.

Process: Cherries are hand sorted for unripes and ove ripes by the farmers before they go into production.

Pulping: A 3-Disc Agaarde pulping machine removes the skin and pulp. The coffees are graded by density into three grades by the pulper. Grade 1 and 2 go separately to fermentation. Grade 3 is considered low grade.

Fermentation: The coffee is dry fermented for 18-36 hours in concrete tanks under a roof that provides shade for better temperature control during fermentation.

Washing/Grading: After fermentation the coffees are washed and again graded by density in washing channels. They are sometimes soaked in clean water overnight.

Drying: Sun-dried 12 to 20 days on African drying beds. Time depends on weather conditions. Coffees are covered under plastic during midday and at night.

This is the fourth Washed Kenyan lot we have purchased, and have done so with the help of our partners at Nordic Approach, where they work closely with in-country partners and we trust they work as sustainably as possible in the area, to grow together with the farmers and washing stations on the ground.
