Processing Level: 3/5 - This lot has had some heavy processing which impacts the cup, but you're able to taste clarity and clean cup from great quality processing and growing.

 

This coffee is a special one - it's an amazing partnership between the growers of this coffee, the producer, and the people who use this coffee. This coffee was grown with Veci Project, working with several farms in the Huila region, around Acevedo, to grow excellent cherries ready for the next step - Processing. 

Luis carries out lots of experimental processing, with many different varieties, but this particular one is truly outstanding. The processing starts with a phase of fermentation in Cherry, before being depulped and moved for a second fermentation. This is where a special strain of Saccharomyces yeast was added to the processing, along with a locally cultivated native bacteria. This fermentation step in mucilage was key for bringing out  bright tropical fruit notes out of the Pink Bourbon Variety.  It was then dried straight away in mechanical driers to give us a bright, yet clean finish whether enjoyed as an espresso, or a filter. 

This coffee is truly outstanding, with bright tropical notes being elevated from the fermentation, while still having a Pink Bourbon variety flavour profile with bright citrus fruit notes throughout. This particular lot has been used by the Swedish Barista Champion Lakis Psomas, who recently reached 9th place in the World Barista Championship in Busan! It's truly a world level coffee!
