3/5 - The fermentation profile on this Catuai really boosts the natural flavour and complexity of the variety, while not going overboard and retaining clarity and a clean cup. 


We first met and cupped Jose's coffee while in Panama City earlier this year, and were instantly connected to how he worked, and how amazing his coffees were. We bought several washed and natural lots, that we've used with very good results in both National, and World Brewers Cup competitions. 

The coffee is grown and processed at his farm in Boquete, at Hacienda Cañas Verdes. It's a truly beautiful place, where the trees grow in serenity, and process is controlled and carried out perfectly. There he grows Geisha and Catuai, with this lot coming from his delicious Catuai.

The cherries are hand collected in the optimum maturation point, then hand-selected and floated with mountain spring water. The whole cherries are fermented for 24 hours in open tanks. Once this first stage is finished, the cherries go through a second phase of anaerobic dry process for 120 hours. After the fermentation is completed, the cherries are transferred manually to the African raised beds to the final sun- dried stage for 25 days.

Everything is shipped from Zurich, Switzerland. We use Swiss Post, UPS, Fedex, or DHL as our shipping options.
